Don't worry about that too much. Jute comes in various weaved, just pick one not too open.
2. would it be best to close the panel up at the back with wood or would it be better to leave the back of the panel the same as i would do the front so that any sound can enter from the back of the panel?
If it's a broadband panel (just a piece of wool actualy) you can leave it open. Only presure/panel-traps need to be closed.
