I now have a pile of lumber and a pile of 703 in my garage
I have attached what I will be building. What do you think of the angle on the soffits?

That's the correct angle Ryan - perhaps place an absorber between them??

I have been reading different posts out there and have wondered if I should not just put Hangers along that back wall behind the false wall.
What do you think?

It's really up to you Ryan - both hangers and panel absorbers will absorb the low end which is what you are after. Perhaps maybe the hangers will take out more of the low - upper mids than the panel absorbers but it's touch and go either way.
