How many yards of 56-Inch Wide Burlap Fabric would I need to cover 6 2'x4' Absorber Panels? 8?

no, you don't need 8 yards.
If it's 56" wide, you can cut it in (just over) 2' sections, and use the 56" wide part over the 48" part of your absorber.
You have 6 absorber, 2.5' wide cloth (enough to wrap around the edges) each = 21 feet = 7 yards.
PS, how thick are your absorbers? Make sure you have enough fabric to wrap around the edges.
