will dimmers still create a buzz/hum even if they are on a totally different breaker/circut then the rest of everything?
are there any dimmer boxes that dont buzz?

A good choice is the Lutron Nova T model http://www.lutron.com/novat/ it's their best one and if you add the debuzzing coil it will work good. The choice that I am going with are the variable transformers from Staco http://variac.com/staco_variable_transformer_500_s.htm I am planning on using the 511 model since they are more compact and cheaper.

Might depend on the layout of your electrical in your facility.
I use standard $8.00 Lutron Dimmers and have no dimming noise problems. However, my circuits for the studio and lighting are separate. Nor do they run parallel to each other.

Guitars pick up the Luton dimmers quite bad - especially if you are within 3 feet of the dimmer with a guitar. It drops off after you move away but even then there is a low level hum in the amp.
