Does it matter if all my looms are balanced?

I'm installing my kit based around an Allen and Heath GS3000
I have a load of looms from a previous studio I used to have 8 years ago, I've tested them and repaired any faulty ones, but my question is this - does it matter if they are all balanced? (pretty much all of them are balanced)
In what instances would I need unbalanced looms?
I have a loom with stereo jacks on one end and mono jacks on the other end - any idea what this should be used for?
To give you an idea I've put a list together of the outboard , fx and desk - some is from the old place, some is new
