My little room is 12' x 8' with an 8' ceiling. What's the down side if I pretty much cover the room (including ceiling) with "SelectSound Acoustic Black Board"? The minimum order for the stuff is Eight 4'x8' sheets! I could plaster the whole thing with it! Other than having to re-create some kind of ambience with plugins, is this a bad idea?

That will kill all the ambience at mid and high frequencies but do nothing for the more important problems at low frequencies. What you need most is uniform absorption across the audio frequency range.
