Garage build-out, Sub-panel and surface mount receptacles

Hello,
I am converting my garage into a home studio. It's not going to be a room within a room, just resilient channel with 2 layers of sheetrock. For the electrical lines, I'm trying to keep the penetrations to a minimum. The original garage had a subpanel with 4 breakers in the wall being fed by an 8 gauge wire from the main house panel. Should I pull out that subpanel and mount it (or another one), to the finished wall so only the main 8 gauge wire has to penetrate the leaf? I was going to go with surface mount outlet boxes and raceways, one for better isolation, and two because the walls will be way thicker than a standard electrical box. If I leave the subpanel in the wall, I'll have to penetrate the leaf 4 times for each breaker. I can't seem to find surface mount subpanels however. Would I just use an exterior panel?
