Hi,
I want to solder a 1/4" mono connector. When I opened up the connector, there are two tabs on the connector. Does it matter which one I solder the cable to?

? Mono still has a positive and and earth so you will need to solder the shield to the larger of the two and the core to the smaller central pin.

I should have been more specific, its a 6.3mm inline female socket. I've attached two pics. I'm using 2 core speaker cable. This is to join up an amp head to a speaker cab in another room. Do I solder one core as the ground and one core to one of the solder terminals?

maybe you're trying to solder up a stereo jack as mono? i'd insert a mono plug and test with a continuity tester or resistance meter to see which of the connectors are touching the tip and ring portions.

I'm trying to solder a two core cable (black & red) to this in line connector and also solder another in line connector to the other end of the cable. If I soldered the black to ground and the red to the left solder tag on both ends, what could be the difference if I soldered the black to ground and the red to the right solder tag on both ends?

Since I'm not sure what the pin out actually is, so I recommend using a meter to sort out the connectivity and then solder appropriately. Switching the wiring could confuse the polarity of the wiring if you're not consistent in the wiring.

Ah right!
I had this problem too.
Had to go back are change all of my tie lines.
What I would do is place a jumper (short cable) over the Ring and tip and solder the cable to either that way it will work regardless.
