These folks carry the ProCo line, and I have ordered from them with success:

am i correct in assuming that all wall plates need to be wired by hand? and am i also correct in assuming that the plates fasten directly to a regular electrical box?
im thinking about just getting a snake but i like the appeal of surface mounted plates

Correct on both counts. And correct about the appeal factor, IMHO. So break out that soldering iron!
I must admit, soldering is something I don't do as often as I'd like, because I actually enjoy it. There's just something about that smell of rosin that puts me at peace with the world. Comes from years of being a bench tech I guess. But it gives a certain level of satisfaction to know that you actually BUILT part of your studio, as opposed to just plugging it all in.
