Some more progress, finally
Finished insulation and first layer of 5/8 drywall. Now working on the second 5/8 drywall layer using greenglue in between first and second layer.
Some pictures below:

Started joint compounding drywall joints, yesssssssss, no more lifting 5/8 drywall boards

Room almost done and will be posting pictures soon.
Below is a picture of the HRV unit I just installed in another room:

Time to buy a computer, etc.... but construction wise done for now.....

It's looking pretty darn good! How does it sound in there? Have you done any REW tests?

I don't have REW tests yet but definitely the room sounds great!
Hopefully soon will have more pictures and information.
