Solutions for ceiling please in new Irish build.

Hi folks,
Im in the middle of building my studio in dublin Ireland, and Im looking for some ideas with regards to completing the ceiling.

The studio is located in the downstairs of a huge factory, so there is about a 4 metre drop between my floor and the ceiling above. The problem is, that the ceiling above is wooden, and there are many holes. So..our plan was to build a new ceiling underneath the existing one, fill it full of rockwool, and then put a sealed plasterboard lid on top, a few feet below the existing wooden ceiling.

Logistically, this seems a little difficult, as there is no room above to maneuver. If we build the lid first, then how do we stuff the cavity? Do we have to stuff the cavity as we go? Is there a better way to accomplish this?
